Who prepared the first Cocoa?
The first COCOA was prepared by Coenraad van Houten of Amsterdam in 1828 by extracting excess cocoa butter from the crushed cacao bean. This process rendered a powder form of soluble cocoa, whereas drinking chocolate (q.v.) at this time was sold in the form of cakes and had a disagreeably high fat content.
Cadbury’s COCOA ESSENCE was introduced-by Cadbury Bros of Birmingham in December 1866. Before potato starch and flour had been used to counteract the greasy cocoa butter in drinking-chocolate. Their Cocoa Essence was pure cocoa powder.
